American dining is changing at a rapid pace. Hugo&#8217;s represents this change by steering away from old modes of fine dining like dress codes, white tablecloths, pretentious service and oversized food and replacing it with a warm, comfortable setting, hip music and relaxed personable service. Like tapas or sushi, individually priced items are sized properly so you can sample three or more courses and still have room for dessert. All our menus embody the best ingredients Maine and New England have to offer.<br />
